My name is Cecilia Rabassi, and almost thirty years ago, I became the first woman in the world to achieve the title of Maître Chocolatier.
For me, “making chocolate” means starting from the very beginning, with raw materials—selecting the finest cocoa beans and verifying the quality and sustainability of the crops directly on-site, working hands-on in plantations alongside local agronomists.
What I’ve learned over the years is that making chocolate is a bit like dancing: it requires elegance, precision, discipline, and the perseverance to keep refining each step until you achieve the perfect balance.
