Olive Variety:

Predominantly Casaliva (native variety), blended with Frantoio, Leccino, and Pendolino.

Aromas:

Fresh and delicate notes of sweet almond and freshly cut grass, with light floral or apple hints, typical of the Casaliva variety in the Valtenesi area.

Palate:

Soft and enveloping on the palate, characterized by rare balance. Bitter and spicy notes are barely hinted at and never aggressive, leaving a pleasant and persistent sweet almond aftertaste.

Perfect on lake fish (Whitefish, Perch, Pike), meat carpaccio (e.g., Carne Salada), and fish tartare. Excellent on cooked and raw vegetables, crudités, and in baking cakes and desserts (as a butter substitute) or light mayonnaise.

2025/26

Description

Harvesting and milling period: from mid-October to mid-November.

Time from harvest to milling: does not exceed 24 hours.

Milling method: continuous cycle, with hammer crusher and centrifugal decanter. Cold extraction.

Color: green, more or less intense depending on its maturity.

Acidity: the harvest and the pressing of the olives carried out in a timely manner make it possible to obtain an oil with very low acidity (0.2% – 0.3%).
